Summer Options

***Edited — These waffles are not gluten free, but by substituting a GF all-purpose flour mix could be.  Couscous is made from Semolina so is NOT gluten free.***

Summer has definitely arrived and with it the question of what’s for dinner that won’t heat up the house.

My fall back, as long as strawberries are in season, is waffles with strawberries.  Yep, you read that correctly, waffles are a hit for dinner in this house.  There are lots of vegan waffle recipes out there some more healthful than others.  While perhaps not the most healthy, the waffle recipe in Vegan Family Favorites by Erin Pavlina is the closest I’ve found to the waffles I’ve made using beating egg whites.

If you’re not concerned about avoiding dairy, add a little whipped cream to top everything off.  There is also a soy version of whip cream available.  I’ve worn out my standard waffle iron and am currently using a Belgian waffle iron.  I’m on a hunt to find a standard maker that meets my needs.

Tonight waffles were not on the menu.  Salads are, of course, a great summer option.  I tried a new recipe tonight, “Herb Garden Couscous and Black Bean Salad” from Vegan Express by Nava Atlas. ( I’ve only tried a few recipes from this book, but have used her Vegetarian Express for years and love most of the recipes.)

It was OK, but not a hit here.  With a few changes for the next time it might go over better.  Guy didn’t care for the mint leaves and Jesse didn’t like the fresh dill.  As usual, there’s no pleasing everyone.  We were having thunderstorms as I was preparing this and I couldn’t resist the photo opportunity with the rainbow.  I think the salad is almost as colorful!
