Popeye Pasta

***Edited — By replacing the noodles with a GF variety this dish becomes gluten free.***

This recipe comes from Eat, Drink and be Vegan by Dreena Burton and is found on page 139.  It has lots of Spinach in it, but unbelievably enough everyone likes!  I do chop the spinach up fairly small, so the sauce is pretty green.  A fairly easy recipe.  Not the most beautiful dish, but tasty and healthy!
