Today’s Meals

***Edited — The pancakes are not GF, but could easily be converted by using a GF all-purpose flour like Bob’s Red Mill.  The salsa mentioned is gluten free as are the black bean tostadas, as long as the tortillas are GF.***

I was doing an online search for dairy and egg free pancakes and stumbled upon this recipe for Orange Pancakes.  Since today is a holiday I took the time to make the “boys” pancakes.  I’m not a pancake person, but these were delicious!   I substituted whole wheat pastry flour to make them more healthy.   Everyone liked them and it really did make enough for four people — two of those teens.  I will be adding them to my permanent recipe collection.

For dinner we had Black Bean Tostadas made from Vegetarian Express by Nava Atlas pg. 50.  The salsa  is homemade and the recipe came from Pioneer Woman Cooks.  The salsa was very well received.  The boys added cheese to their tostadas, but it isn’t really necessary for taste.  I added a dollop of vegan sour cream to mine.  I think these are very tasty and the majority in this house agree.
